Ham croissants are popular fingerfood all over Switzerland. This gourmet appetizer is very easy to make and a favorite activity with children. They are just right for a casual get-together but can also be enjoyed for a light meal with a green salad as accompaniment.
0.5 lbs fine sliced Virginia ham
2 tablespoons chopped Italian parsley
3 whole French-style gherkins (cornichons)
1 full tablespoon Dijon mustard
3 tablespoons heavy cream
Frozen puff pastry – unthawn according
to instructions on package
1 egg + 1 tbsp of milk
1 Preheat oven to 420 °F. Take a medium bowl. Cut ham in small dices.Chop cornichons very finely. Add the parsley, cream and mustard. Stir these ingredients together. Season with salt and pepper.
2 Unfold the pastry and cut each sheet into 2 rectangles, then cut out triangles. 0.5 inch from the bottom transfer a teaspoon of the ham mixture. Carefully roll the triangles starting from the bottom to the top, give it a shape of croissants with your fingers. Arrange croissants on a parchment-lined baking sheet.
3 In a small cup, whisk together milk and egg. Brush croissants with egg wash. Bake about 16 minutes until golden brown. Let the croissants cool or serve them warm.
